Ingredients

  • •4 artichokes
  • •1 lemon
  • •5 cups water
  • •1 tbsp flour
  • •500 g large fresh fava beans
  • •1 medium onion
  • •4 tbsp olive oil
  • •2 tbsp lemon juice
  • •2 tsp sugar
  • •Salt, black pepper

Preparation

  1. 1

In a deep bowl put 5 cups water with the juice of half a lemon and the flour; stir. Pull off the artichokes' outer leaves, cut the stems, remove the fuzzy center with a knife and spoon, and rub all over with half a lemon so they don't darken; put them in the floured lemon water. Trim the favas, score one side of each with a knife and wash. Peel the onion and halve it whole. In a wide pot put the artichokes, favas, the two onion halves, 2 tbsp olive oil, 1 cup of the floured lemon water the artichokes soaked in, the lemon juice, sugar, salt and black pepper; invert a porcelain plate on top as a weight. Put the pot on the heat; once it boils, lower the heat and cook at least half an hour. When the favas and artichokes have softened, take off the heat, remove the onions and let cool. Once cooled, transfer to a plate, drizzle the remaining 2 tbsp olive oil over, sprinkle with chopped dill and serve.
