Seasonal produce: Artichoke
Ingredients
- •4 thin slices wholemeal or toast bread
- •4 large tomatoes
- •1/2 tsp thyme
- •Juice of 1 lemon
- •2 tbsp olive oil
- •1 tbsp vinegar
- •1 tsp brown sugar
- •1 head garlic (halved)
- •1/2 cup cubed and boiled artichoke
- •1 tbsp finely chopped parsley
Preparation
- 1
As preparation, heat the oven.
- 2
Halve the tomatoes and press lightly to push out the seeds. Place the tomatoes cut-side up in a heatproof dish. Mix the thyme, salt, black pepper, olive oil, brown sugar and vinegar well and pour over the tomatoes.
- 3
Bake the tomatoes for 30 minutes, 15 minutes on one side and 15 on the other. Take out of the oven and leave to cool slightly.
- 4
Toast the bread slices until golden on both sides. Spread as much pounded garlic as you like on the bread. Boil the artichoke in lemon water, cube it and fill into the tomatoes. Serve warm.
- 5
Chef's tip: Bake the garlic tomatoes just before serving, otherwise they lose their flavour. For a nicer dish, we recommend using Italian-style garlic-flavoured toasted bread.
