Ingredients

  • •3 small celeriac roots
  • •6 large cabbage leaves
  • •Juice of half a lemon
  • •2 small cups olive oil
  • •2 onions
  • •1.5 small cups rice
  • •1 sugar cube
  • •1 tbsp currants
  • •1 tbsp pine nuts
  • •1 cup water
  • •1 tsp sumac
  • •1 tbsp lemon juice
  • •6-7 parsley stalks

Preparation

  1. 1

Peel and halve the celeriac, hollow them out and keep in lemon water. Blanch the cabbage leaves in boiling salted water and drain. Peel and chop the onions.

  2. 2

Heat 1 small cup olive oil and soften the onion. Add the rice and sauté. Add sugar, currants, pine nuts, salt and black pepper and 1/2 small cup hot water. Cook covered over low heat until the rice is just tender.

  3. 3

Drain the celeriac and fill with the rice mixture. Open each cabbage leaf, place a stuffed celeriac in the center and wrap into a bundle, tying the top with parsley stalks.

  4. 4

Arrange the bundles in a pot and add hot water. Add the remaining olive oil, lemon juice, salt and sumac. When it boils, lower the heat and cook until the vegetables soften. Let cool covered. Plate and serve.
