Ingredients

  • •1 kg whole beef tenderloin
  • •1 medium onion (finely chopped)
  • •100 g leeks (cut into thin strips)
  • •3 garlic cloves (crushed)
  • •3 garlic cloves (whole)
  • •6-7 large mushrooms, sliced (200 g)
  • •100 g sweet red pepper or roasted red pepper
  • •2 tbsp soy sauce
  • •1 tbsp rosemary
  • •1 tsp dried sage
  • •4 tbsp olive oil
  • •Salt, black pepper

Preparation

  1. 1

Cut the cleaned whole tenderloin lengthwise down the middle to open it out. Brush 2 tbsp olive oil well over the outside and inside of the tenderloin. Spread half a tbsp rosemary and 1 tsp sage over the opened inside of the tenderloin. Insert the 3 whole garlic cloves into various spots in the tenderloin. Keep the tenderloin like this in the fridge for 1 hour. Sauté the onion, crushed garlic, red bell pepper, leeks and mushrooms in 2 tbsp olive oil until the onion and leeks are very soft. Add soy sauce, salt and black pepper and sauté 2 more minutes.

  2. 2

Put this mixture inside the tenderloin. Fold the two opened ends over one another and secure with toothpicks. Bake in an oven preheated to 175°C for about 45 minutes. Remove the toothpicks from the cooked tenderloin, slice and serve.
