Seasonal produce: Spring Onion

Ingredients

  • •4 potatoes (about 200 g each)
  • •6 tbsp cream
  • •1 egg yolk
  • •Butter
  • •2 tbsp grated gruyère cheese
  • •2 tbsp chopped parsley
  • •2 tbsp chopped spring onion
  • •Chopped walnuts
  • •Salt, black pepper

Preparation

  1. 1

Wash and dry the potatoes, wrap each in aluminum foil and leave in a preheated 200°C oven for 45 minutes. Check doneness with a pointed knife. If still firm, leave them 5-10 more minutes in the oven.

  2. 2

After taking them out, cut a slice along the length of each potato. Like a lid, scoop out the insides and mash with a fork.

  3. 3

Whisk it with 30 g (2 tbsp) butter and 4 tbsp cream. Add salt and black pepper, then the spring onion and parsley.

  4. 4

After adding the chopped walnuts too, fill the potatoes with this mixture.

  5. 5

In a bowl, mix the remaining cream with the egg yolk and gruyère and distribute over the potato surfaces.

  6. 6

Lay them on a greased tray and put in a preheated 200°C oven. After 10 minutes you can take them out and serve.
