Boil 4 cups of rice with hot water. Sauté 2 medium onions with 2 tbsp fat and salt until golden, add the washed cubed meat and stir together. Cook in a non-steaming pot over low heat about thirty minutes. Transfer this mixture to a wide-bottomed pilaf pot and add the peas on top. Over the peas scatter a thin layer of grated carrot and 1 tsp cumin. Then spread the boiled rice evenly over, pour 5 cups boiling water and the rest of the fat slowly over and cook over low heat about twenty minutes until the liquid is absorbed. Take off the heat and rest about ten minutes. Carefully invert the pilaf onto a wide tray and serve.
