Ingredients

  • •2 pears (halved lengthwise, cored and cleaned)
  • •2 tbsp brown sugar (30 g)
  • •1 tbsp butter (15 g)
  • •4 cinnamon sticks (5 cm each)
  • •1 pack vanilla
  • •10 g fresh ginger (2 tsp chopped) or 1 tsp dried ginger
  • •4 dried prunes (pitted, halved)
  • •1.5 tbsp dark raisins (25 g)
  • •1.5 tbsp golden raisins (25 g)
  • •1.5 tbsp currants (25 g)
  • •Zest of 1/2 orange
  • •1 tbsp molasses or mulberry molasses
  • •A bit more than 2 cups apple juice (625 ml)
  • •1 tbsp plum marmalade
  • •Parchment paper

Preparation

  1. 1

Heat the oven to 175°C. Cut parchment large enough to wrap each pear twice. Set the pears on the parchment. Brush each evenly with butter and sprinkle brown sugar evenly.

  2. 2

Divide a quarter cup of apple juice over the pears. Wrap the parchment so it won't open and bake 40 minutes.

  3. 3

While the pears bake, combine all the remaining ingredients and bring to one boil.

  4. 4

Turn off the heat and let this mixture rest until the pears are done.

  5. 5

Once the pears are baked, cut the parchment open in a cross shape with a knife. Pour the rested mixture over the pears and serve in the paper.
