Ingredients

  • •150 g margarine
  • •3 eggs (room temperature)
  • •1 cup sugar (175 g)
  • •1 cup flour (115 g)
  • •1 tsp baking powder
  • •1 packet vanilla
  • •Zest of 1 orange
  • •For the topping:
  • •Zest and juice of half a lemon
  • •1 small cup powdered sugar (50 g)
  • •1 cup orange juice (200 ml)
  • •Zest of 1 orange
  • •To garnish: 1 orange

Preparation

  1. 1

Heat your oven to 160°C. Grease a square or rectangular cake pan and flour it lightly.

  2. 2

Melt the margarine and let it cool slightly.

  3. 3

Mix all the topping ingredients in a bowl and set the mixture aside for later use.

  4. 4

Whisk the eggs and sugar at medium speed for 2 minutes. Add the warm margarine and orange zest and whisk 1 more minute.

  5. 5

Sift the flour, vanilla and baking powder together into a bowl, add to the egg mixture and whisk at medium speed for 1 minute. Pour the cake batter into the pan.

  6. 6

Bake in the preheated oven for about 1 hour.

  7. 7

After the cake comes out of the oven, let it sit 5 minutes, then turn it out upside down onto a serving plate. After 3 minutes, pierce the top in 7-8 places with a fork.

  8. 8

Slowly spoon the prepared orange mixture over it so it soaks in.

  9. 9

Grate the zest of the orange you'll use for garnish and sprinkle over the cake.

  10. 10

    Serve once cooled.

Note: Be sure to make this cake in a square or rectangular pan; since it's a wet cake, other pans won't let it absorb the sauce fully.
